There are two ares from which you might want to exclude certain pages from being listed. Page Widget and Tabs on you site.
Excluding pages from Widgets
The pages widget (wp-admin > Appearance > widgets) allows you to list all pages of your wordpress website and it also makes provision on excluding certain pages by inserting their page id as seen below:

All you need to do is find the page ID and innsert above, but where are the page IDs? A bit tricky now. What you need to do is goto wp-admin > Pages and the hover your mouse of the page of which you need the ID and you will see it in the status bar at the bottom of your browser:
